Do you like fresh veggies? Yum! Yummy Nutrients and Oh, my golly goodness!! But do you ever just keep making the same bland meals with them? Don’t worry! Delicious Roasted Brussels Sprouts

But first a delicious recipe with bacon roasted brussels sprouts and sweet maple syrup glaze. It is simple to make and super yummy! You need brussels sprouts, crispy bacon, maple syrup and some spices that give everything a little more flavour.

To bake the french toast, set your oven to 375 degrees. This will ensure the oven gets all nice and roasty.

Now, trim the ends off of the brussels sprouts and slice in half.

Now lay them on a baking sheet, drizzle with olive oil and some salt to taste plus black pepper as you like.

Place into an oven for 20-25 minutes. Stir them occasionally so they brown evenly.

While the sprouts cook, let's make bacon! Fry up your bacon in a pan until super crispy and chop into wee bits. Combine the maple syrup, dijon mustard and apple cider in a small pot. Let it cook until you have a slightly thicker creamy dish and the flavors marry well together. Toss brussels sprouts in the maple glaze and sprinkle with the crispy bacon when they are finished roasting. Yum! This will be a definite hit!

Fun Summer Corn Salad

Who does not love corn on the cob in the summer. Yes, in place of only boiling it and putting some butter on top for each bite enjoy a spicy corn salad which is flavorful.

First you must remove the kernels from four ears of corn.

After which fry the browned corn kernels in a tsp of olive oil. This will help the sweet flavor come through.

Then to make the salad super appetizing and fresh, add one more layer of diced red onion, with some chopped jalapeno pepper (for a little kick), and some finely minced cilantro.

Drizzle over a cheek of lime with some sprinkles of salt Mix all ingredients well together.

It is a great salad to accompany any summer meal and it will definitely get the wow from your family & friends!

Tasty Grilled Eggplant

Here is something different and special to taste. Today we are going to grill some eggplant with a miso glaze full of flavor. Ingredients 2 medium eggplants sauce miso paste soy sauce rice vinegar honey

First, slice the eggplants into large rounds as they will shrink when grilled.

Drizzle olive oil over the slices small brush, so that they do not stick on griddle.

You grill them on medium-high heat until they are soft and have great marks from the grill. This should take a couple of minutes per side.

Meanwhile, combine the miso paste with 1/4 cup soy sauce. 2 Tbsp rice vinegar and a drizzle of honey? This is the sauce that will make this eggplant taste heaven!

When the eggplant is nearly ready, brush one side with miso glaze (I just used a silicone pastry brush and it was fine- if you are using metal skewers I would be more delicate), then flip over for another minute or two on each sides.

At the end top grilled eggplant with chopped green onions and sesame seeds for extra flavour. Enjoy this tasty dish!

Crispy Zucchini Fritters

Lovers of zucchini and all things crispy need to make this Crispy Zucchini Fritters today. Finally these are really a lot of fun, and so tasty too!

Grate 2 medium zucchinis. Squeeze out any excess water so they're not too sloppy to fry.

Combine 2 grated zucchinis with two beaten eggs, some flour (how much really depends on wet your zucchini is) a handful of parmesan cheese chives chopped and salt pepper to taste. The batter will be a dough like consistency. which make it perfect for fritter.

In a frying pan, fry in olive oil on medium heat.

Place two tablespoons of the zucchini mixture into a pan to create small fritters.

Cook a few minutes per side until they are brown and crisp.

Top these delicious fritters with a dolloping of sour cream or tzatziki for dipping. Great for a snack or as an appetizer!

Grilled Romaine Lettuce

And did you ever consider grilling romaine lettuce? They may sound a little strange at first, but oh boy are they tasty and fun to make!

Begin by halving a head of romaine lettuce, cutting it right through the core so that everything stays in one piece.

Brush the cut sides with olive oil and sprinkle on a bit of salt, pep. [].

Place the lettuce, cut -side down, on a grill preheated to medium-high heat and cook for 2-3 minutes or until lightly charred. This imparts a lovely smoky taste.

Top with balsamic glaze & crumbled blue cheese to take it over the top when done grilling.

It is the perfect appetizer to make for a summer barbecue and it could also be served as a side dish.
